This delightful puffy pancake skillet is a quick and easy breakfast treat that the whole family will love! Serve it warm with a drizzle of maple syrup, fresh strawberries, a dollop of whipped cream, or any topping that suits your fancy.

Instructions:

In a bowl, whisk together the following ingredients until smooth and well combined:

*6 eggs

*¼ cup butter (melted)

*½ cup sourdough discard 

*½ teaspoon cinnamon

*1 tablespoon milk

*1 tablespoon sugar

Add another tablespoon of melted butter to your preheated cast iron skillet. Make sure it’s HOT! 🔥

Bake at 425°F for 20 minutes.

Slice, serve, and enjoy the fluffy goodness!
