Mémère’s friends Lemon Bars:

A Sweet, Tangy Treat Packed with Love (and Protein!)
There’s something magical about a recipe passed down through generations, and these lemon bars are no exception. This delightful recipe comes straight from one of my mémère’s dear friends, who was kind enough to share her secret to these zesty, buttery treats.

When I offer these lemon bars to my husband’s friends, they often politely decline at first—until I mention they’re packed with protein thanks to the four eggs in the recipe. (Hey, it counts, right?) One taste of the tangy lemon filling and buttery crust, and they’re hooked.

Ingredients

For the Buttery Crust:

2 cups all-purpose flour
½ cup powdered sugar
1 cup unsalted butter, softened
Zest of 2 lemons(optional)

For the Zesty Lemon Filling:

2 cups granulated sugar
⅓ cup fresh lemon juice (freshly squeezed)
4 large eggs
¼ cup all-purpose flour
½ tsp baking powder

Instructions
Preheat and Prep: Preheat your oven to 350°F (175°C).

Make the Crust:
In a medium bowl, sift together the flour and powdered sugar. Cut in the softened butter and use your hands to gently mix until a crumbly dough forms. Toss in lemon zest. Press the mixture firmly and evenly into the bottom of your prepared pan to create a smooth, compact crust.

Bake the Crust: Pop the crust into the preheated oven and bake for 15 minutes, or until it’s just starting to turn golden.

Add parchment for easy lift after cooled

Whip Up the Filling: While the crust bakes, combine the sugar, fresh lemon juice, eggs, flour, and baking powder in a blender. Blend on medium speed for about 5 minutes to ensure everything is silky smooth and perfectly mixed.

Assemble and Bake: Pour the lemony filling over the warm, partially baked crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden at the edges.

This one will be hard to get out in one piece..


Cool and Cut: Let the lemon bars cool completely in the pan (this part requires patience, but it’s worth it!). Once cooled, use a spatula to lift the bars out, cut them into neat squares, and store them in an airtight container in the fridge.

Clean your knife between cuts for cleaner slices

Enjoy! Serve these beauties chilled or at room temperature for a burst of lemony goodness. They’re perfect for sharing with friends, family, or just savoring during a quiet moment with a cup of tea.
